Following the Champagne tradition of the past centuries, the Authentique cuvées have grown and been raised under cork for many years. This particular breeding favours the micro-oxygenation of the wine and develops the power and the finesse of its aromas. This "cork-staple" sealing technique requires manual work; especially during the disgorgement.

Tasting notes

The Champagne is presented in a square-ring bottle, the sign of an ageing process with a cork. It shows a tinted gold yellow light green dress with strong lemon yellow tones.

The first nose is a floral farandole with honeysuckle, white rose, wallflowers, together with hints of candid lemon, bergamot and toasted bread. When aerated, it turns towards notes of blackcurrant, biscuit, wet chalk, raspberry, peach.

The approach in the palate is soft and fresh with a creamy and melted effervescence. The wine develops in a gentle and pulpy way reminding of white, red and black fruit. The whole is delicately stitched to a chalky minerality giving a creamy tactile and an elegant patina. The flavoured return rich with fruity, floral and Viennese pastry notes comes to reinforce the sensation of tenderness and fusion.

Food pairings

Parmesan cheese wrapped in pastry, Half-cooked Saint-Jacques with fine pieces of roasted hazelnuts, Pikeperch fillet with iced salsifies in nutmeg, Halibut fillet with creamy coconut sauce with rose, Stuffed guinea fowl with small mushrooms, Breast of roast farm chicken...
